Good News! Green Plantains Probiotic & Loaded with Fiber!

Good news! Plantains are good for you. Living on the coast we are seeing a lot more green plantains vs. the sweeter yellow ones, which we used to eat a lot of in Cuenca. Recently we learned that green plantains could be considered a super food because they behave as a prebiotic, feeding the probiotic (good bugs) in your stomach and because they are loaded with fiber they help with the elimination process. UPDATE Oct 9, 2016...Oops, we jumped the gun on this one. Upon further study we are learning that the green plantain is only a prebiotic when eaten raw or in the dehydrated state, such as plantain flour mixed in smoothies and dehydrated plantain chips.
