Zucchini Pasta with Ragu Sauce: Gluten Free
Italian Food!
This recipe is gluten free, delicious and really quite simple to prepare. Back when we lived in the states we had so much zucchini in the garden we couldn't eat it fast enough. Zucchini is a garden wonder as it grows really fast and can get really big! I used to make zucchini bread, zucchini cake, and cookies with the zucchini that grew too big. And now here's another thing you can use the bigger zucchini for; making pasta!

You will need a spiralizer. Sorry, not sure if
they sell the spiralizer at Coral here in Cuenca but it won't hurt to look and see
next time you are in there. I got mine in the u.s. You can use different
veggies in the spiralizer to make simple, healthy, creative dishes.
Ingredients
10 cloves garlic, diced
3 tbsp EV olive oil
1 or two onions, chopped
2 carrots, diced
2 celery stalks, diced
6 tomatoes, chopped
2 or 3 lbs ground beef, turkey, or chicken
3 large size zucchini (serves 4 to 5 people)
Handful of fresh basil (or dried works too)
2 or 3 tbsp dried oregano
1/2 tsp red pepper flakes
2 large packets of "LOS ANDES" tomato paste (Coral) or 1 small can tomato paste (u.s)
2 tsp sea salt or to taste
3 cups of water

Preparation
Saute garlic until brown; add diced vegetables and allow to cook for ten minutes. Add chopped tomatoes to vegetables and continue cooking 10 or 15 minutes with the lid on. Then add the tomato paste and 3 cups of water and allow the sauce to cook for ten more minutes, lid on.

Meanwhile, in a frying pan, brown ground beef or turkey.
After sauce has cooked for the 10 minutes,add the
herbs and seasonings, stir well.
After ground meat has cooked, add it to the
sauce and cook on low for 2 hours, lid ajar. Check the sauce every half hour or
so, stirring to make sure it does not
stick.
Preparing the zucchini: You will need a
spiralizer. Pick the size and thickness
of pasta by using the appropriate gadget on the machine. (See the video)
About one half hour before sauce is done, Saute
the zucchini in EV olive oil, garlic and sea salt. Only allow to quickly cook for 4 to
5 minutes as you do not want the zucchini pasta to get mushy. Strain out any
excess water from zucchini.
If cooking for just two people you'll
only need one large zucchini.
Place zucchini pasta on individual serving
plates, pour on plenty of sauce and Parmesan cheese. Eat right away while it is nice and hot! Delicious! Enjoy this healthy, gluten free
Italian dinner. Serve with bread and a side salad.

ReplyDeleteI'm curious, how much is the gorund beef and how does it compare to the beef back in the states?
It is less expensive to buy at Supermaxi than at Coral. About the same price as in the states. It has a stronger flavor than the beef in the states.
