Enchiladas is one of our favorite Mexican dishes. Chili powder is an essential spice to make homemade Mexican food, but it is hard to find in Cuenca so we make our own using a few spices that you can find in Cuenca. A good homemade chile powder uses paprika, cumin, garlic powder, onion powder and a small amount of powdered oregano; cayenne is optional for the spicier chili powder. The base of the chili powder is the paprika. Recipe follows the video.
Homemade Chili Powder
2 tbs paprika
1 to 2 teaspoons cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 tsp powdered oregano
1/2 tsp sea salt
1/2 tsp or more of cayenne, depending on your heat level.
I make a large spice jar of it at one time and keep it stored in the refrigerator so it does not cake up.
